Estate grown, 100% Premium Arabicas

Coffee bean selection is based on knowledge and a seasoned palate. Harvesting, sorting, processing, altitude, climate, geography, season; each plays a part in determining the quality of coffee. In selecting a coffee from a country, we cup dozens of coffees from specific estates for their richness and flavor. We primarily roast estate grown coffee, because plantation or estate farmers have a passion that we follow to the cup. These coffees are grown without the use of pesticides and are cultivated and cared for by hand so that each crop represents the very best of its kind.

Because of our exacting standards, we won't always have the large selection of varietals that you may see other places. We would rather recommend a different coffee to a customer instead of supplying them with a coffee that we know is inferior. If you don't see a coffee you are looking for, let us know. We may be able to suggest an alternative or let you know when we will be able to get it.

Brazil

Brazilian Fazenda Vista Alegre Natural Dry Peaberry TM By using traditional and exacting standards, the Brazilian finca Vista Alegre has created coffees that are truly distinctive. Their Natural Dry is full-bodied but not over-powering. It has an intense, full flavor, reminiscent of allspice with overtones of tobacco and lingering hints of black cherries.

Brazilian Fazenda Vista Alegre Organic
This coffee comes to us from the Fazenda Vista Alegre, owned and operated by the Andrade family since 1898. Located in the state of Minas Gerais in southwestern Brazil. The weather conditions are optimal as well: mild tropical summers and dry winters, with the growers providing necessary irrigation during the dry season. This Bourbon is prized for sweet balance in the cup, and rounded body; cup has an attractive, bitter chocolate sweetness. The rounded, balanced personality of this cup is its most striking aspect, balanced by a rustic honey/toffee sweetness, and pralined nuts. The mouthfeel is silky, and the aftertaste has a lingering clean tobacco notes.

Colombia

Colombia Three Sisters Grown above 5,600 ft, this coffee is a special selection of the best coffee produced by over three hundred small coffee growers from the municipality of Tambo, Cajibio and Santander in the Department of Cauca. Its character truly reflects the Andean profile: sweet, fruity, balanced, with a bright acidity and hints of flowers.

Costa Rica

Costa Rica El Indio El Indio is a profoundly balanced cup, with a slightly winey character that typifies Tarrazu from the central Tarrazu Valley area. The brightness has a ripe, mature lemon quality, not what I would normally call a citrus acidity (such as some Kenyas). (Have you ever had a lemon that ripens on the tree to the point it becomes quite sweet?) It has moderate milk chocolate and hazelnut in the cup, offset with sweetness that intensifies in the finish - what a great finish this cup has! The body is medium, and has a silky mouthfeel. The aftertaste is chocolate-caramel, clean and mild.

Costa Rica

La Minita Costa Rican Can a coffee be this perfect? Milder in acidity compared to some other Costa Rican coffees from the Tarrazú region. This coffee has a refined sweetness and balance in the cup. It's a very mild, bright coffee, with some spice, hints of cinnamon and anise, and with our lighter roasts an almondy roast taste with vanilla hints. The aromatics are sweet and clean. It's always an elegant, refined, clean cup.

The farm itself is a model of perfection in terms of technical standards and beauty. The coffee is milled and prepared meticulously and is not brokered by an indifferent third party, but by Hacienda La Minita themselves. It's also a model for how quality can sustain super-premium prices in a very unstable coffee market. The La Minita model is so successful that they begin to apply the same exacting standards to other coffees, and yielding premium prices.

Ethiopian Yirgacheffe The most famous of Ethiopia's coffees is "Yirgacheffe", grown in the area around the town of Yrga Cheffe, near Lake Abaya, in the Sidamo district south of the capital of Addis Ababa. Coffees from the Yirgacheffe growing region are the most distinctive in the world characterized by a a thick rich body, a winy acidity and an intense floral aroma of cinnamon and sweet strawberries.

Centuries of time honored processing traditions allow you to experience history with every sip. We recommend you indulge in Ethiopian Yirgacheffe coffee without adding any cream or sugar to appreciate the uniqueness of one of our most exotic offerings.

El Salvador

El Salvador Pacamara This exceptional coffee comes from the Urrutia Estate on the slopes of the Apaneca-Ilamatepec mountain range in Western El Salvador at elevations between 1,400 and 1,600 meters above sea level. The Urrutia family has been producing coffee since the 1870's and their farm is home to several natural hot springs as well as 200 acres of protected forest. The coffee is grown in phosphorus-rich volcanic soil under a canopy of shade trees and although most of the trees are of the Bourbon variety, the farm cultivates a small percentage of Pacamara as well. This lot of 100% Pacamara is a cup with sweet, fruit-toned acidity and persistent flavors of caramel and chocolate This prestigious coffee has ranked in Cup of Excellence and is featured by many of the leading roasters.

Guatemala

Guatemala Huehuetenango This is an elegant cup: The fragrance very sweet! It is floral and fruited shifting to a mildly chocolate aromatic base with sugar cane sweetness. Cup flavors are very mild and the aftertaste is rather lingering, the appeal of this cup is its fine aromatics, and delicate, clean personality. The body is light but has a creamy texture. This is the classic, clean, Central American cup, refined, fragile, and seductive. Don't expect flavors to leap out, rather, this is a coffee you can savor.

Guatemala Guatemala La Flor del Café This is a trade name coffee from the Las Pastores beneficio (mill), chosen from many small farm lots by the cupping team at La Minita, featuring the outstanding cupper Sergio Cruz. The milling of the coffee is done under the guidance of the same team to exacting standards, and the preparation and cup quality of this coffee bear it out. The aroma is toasty and sweet, the first sip is softly fruited, and very floral (hence the name)! The roast tastes are soft milk-chocolate tones paired with a really velvety mouth feel. It really is a great coffee from Antigua.

Come back to... Jamaican Blue Mountain If Kona is the BMW, then Jamaican Blue is the Rolls Royce. High quality Jamaicans are very hard to find, as the quality of what is exported has decreased. We feel that we have found a truly great Jamaican Blue from the Wallenford Estate. Its essence is fruity and floral, spice and sweetness. "Sip and slosh, breath and swallow:" these are the elements to bring about the texture and flavor of this coffee. Think of Jamaican Blue as a fine red Burgundy. Taste the legend.

Java Estate More carefully grown than their Sumatra cousins, Javas are the elite class of Indonesian coffees. Our washed Java has a clean, full body and a mild, balancing acidity. Hints of spice and a creamy mouthfeel and aftertaste distinguish this fine Java.

Kenya Kenya AA In the heart of the prime coffee growing regions of Kenya, nestled in the foothills of Mt. Kenya, the trees owe their origin to a Bourbon hybrid. Small farmers whose shambas thrive in the shadow of the snow-capped peaks of the mountain produce a coffee that boasts a fine acidity, a full, smooth body, and that incredible black currant flavor that is the hallmark of a top quality Kenya AA.

U.S.

Extra Fancy Kona Quite possibly the BMW of coffees, Kona has a mystique and romance associated with it that is sometimes undeserved. As the demand for this coffee grew, the prices went up and the quality went down. After much cupping, we have decided on the 100% Royal. Grown on the dark, volcanic rock slopes of Mauna Loa by Captain Cook Coffee, this coffee is deliciously rich, medium bodied, and slightly acidic with a heady aroma and a complex, winy, spicy taste.

Yemen Mocha Yemen Ismaili is one of the world's oldest and most famous coffees. Deriving its name from the Yemeni port city of Mocha, it is thought that the trees from Mocha were transplanted from the Indonesian island of Java. There are several different regions of Yemeni coffees and we have chosen to carry the Ismaili. One of the rarest and most well-balanced of the wild Yemeni coffees, the Ismailis "assert themselves gently and never insist." The flavor can be described as winey, spicey, fruity and nutty, with a unique acidity that is smooth and sharp at the same time. Similar to a well-balanced Ethiopian, we find that the Ismailis produce a more consistent flavor from roast to roast.

Organic Peru "La Florida" This Certified Fair-Trade Organic coffee is in the jungles of Chanchamayo, Peru the small village of La Florida banded together to create a better life through coffee. Through this process they preserve the Peruvian forest that has been their families’ home for generations. La Florida works to improve the community in many ways. They support local schools by providing pencils, erasers, notebooks and other items. The Cooperative also owns their own tractor and a truck, allowing them to maintain the roads, making sure they are in good condition, making it easier for members to transport coffee with access from their community into town. Panama Panama La Torcaza A well kept secret, this Panama is produced in rich volcanic soil, developing into one of the most distinguished coffees. Perfectly balanced, a delicate floral note with a complexity that has a creamy, almost butterscotch finish. The absolute purity of this coffee becomes apparent as it cools, becoming even smoother and more integrated; almost any other coffee will lose body and smoothness as it cools. Dedication to quality of taste makes this coffee intoxicating with aroma and flavor.

Papua New Guinea Peaberry Working with the Papua New Guinea Traders www.newguineatraders.com, we have selected this peaberry to represent this country on our site. At 5500 feet this Kinjibi Coffee grown in the Wahgi River valley is hand-picked, wet pulped and sundried. Originating from Jamaican Blue Mountain this coffee is full bodied , well balanced, rich and fragrant.

Indonesia Sumatra Mandheling has an intense exotic flavor, best described as musky, with undertones of earthy mustiness, and top notes of spicy sharpness. With a round and full body, Sumatra is, in general, the wild and untamed country cousin of Java.

Zimbabwe AA+ The best estate Zimbabwe coffees are prized for their balance in the cup. A really good Zimbabwe has moderate acidity, rich flavors, good body and aftertaste. This Salimba coffee, graded for bean size at AA+, and with all the good character expected of this origin. The aroma is both sweet and sharp, with a hint of the East African "wild" note in the coffee. It develops excellent roast flavors at Full City, alternating between slightly sweet-caramelly and bittersweet chocolate, with a slight twist of lemon rind in the cup. Excellent complexity/depth and a unique origin flavors that shift greatly depending on roast... Very much an East African cup profile...
