Coffee
bean selection is based on knowledge and a seasoned palate. Harvesting,
sorting, processing, altitude, climate, geography, season; each plays
a part in determining the quality of coffee. In selecting a coffee from
a country, we cup dozens of coffees from specific estates for their richness
and flavor. We primarily roast estate grown coffee, because plantation
or estate farmers have a passion that we follow to the cup. These coffees
are grown without the use of pesticides and are cultivated and cared for
by hand so that each crop represents the very best of its kind.

Brazilian
Fazenda Vista Alegre Natural Dry Peaberry TM
By using traditional and
exacting standards, the Brazilian finca Vista Alegre has created coffees
that are truly distinctive. Their Natural Dry is full-bodied but not over-powering.
It has an intense, full flavor, reminiscent of allspice with overtones

La Minita Costa Rican Can a coffee be this perfect? Milder in acidity compared to some other Costa Rican coffees from the Tarrazú region. This coffee has a refined sweetness and balance in the cup. It's a very mild, bright coffee, with some spice, hints of cinnamon and anise, and with our lighter roasts an almondy roast taste with vanilla hints. The aromatics are sweet and clean. It's always an elegant, refined, clean cup. The farm itself is a model of perfection in terms of technical standards and beauty. The coffee is milled and prepared meticulously and is not brokered by an indifferent third party, but by Hacienda La Minita themselves. It's also a model for how quality can sustain super-premium prices in a very unstable coffee market. Ethiopian Yirgacheffe The most famous of Ethiopia's coffees is "Yirgacheffe", grown in the area around the town of Yrga Cheffe, near Lake Abaya, in the Sidamo district south of the capital of Addis Ababa. Coffees from the Yirgacheffe growing region are the most distinctive in the world characterized by a a thick rich body, a winy acidity and an intense floral aroma of cinnamon and sweet strawberries. El Salvador From the western half called the Golden Belt. This coffee is produced in the mountains from old style bourbon arabica coffee trees. Guatemala
Huehuetenango This is an elegant cup: The fragrance very sweet!
It is floral and fruited shifting to a mildly chocolate aromatic base
with sugar cane sweetness. Cup flavors are very mild and the aftertaste
is rather lingering, the appeal of this cup is its fine aromatics, and
delicate, clean personality. The body is light but has a creamy texture.
This is the classic, clean, Central American cup, refined, fragile, and
seductive. Don't expect flavors to leap out, rather, this is a coffee
you can savor. |
| Guatemala
La Flor del Café This is a trade name coffee from the Las Pastores
beneficio (mill), chosen from many small farm lots by the cupping team at
La Minita, featuring the outstanding cupper Sergio Cruz. The milling of
the coffee is done under the guidance of the same team to exacting standards,
and the preparation and cup quality of this coffee bear it out. The aroma
is toasty and sweet, the first sip is softly fruited, and very floral (hence
the name)! The roast tastes are soft milk-chocolate tones paired with a

Blue Mountain If
Kona is the BMW, then Jamaican Blue is the Rolls Royce. High quality Jamaicans
are very hard to find, as the quality of what is exported has decreased.
We feel that we have found a truly great Jamaican Blue from the Wallenford
Estate. Its essence is fruity and floral, spice and sweetness. "Sip
and slosh, breath and swallow:" these are the elements to bring about

with it that is sometimes undeserved. As the demand for this coffee grew,

| Mocha
Yemen Ismaili is
one of the world's oldest and most famous coffees. Deriving its name from
the Yemeni port city of Mocha, it is thought that the trees from Mocha were
transplanted from the Indonesian island of Java. There are several different
regions of Yemeni coffees and we have chosen to carry the Ismaili. One of
the rarest and most well-balanced of the wild Yemeni coffees, the Ismailis
"assert themselves gently and never insist." The flavor can be described
as winey, spicey, fruity and nutty, with a unique acidity that is smooth
and sharp at the same time. Similar to a well-balanced Ethiopian, we find
that the Ismailis produce a more consistent flavor from roast to roast.

Zimbabwe AA+ The best estate Zimbabwe coffees are prized for their balance in the cup. A really good Zimbabwe has moderate acidity, rich flavors, good body and aftertaste. This Salimba coffee, graded for bean size at AA+, and with all the good character expected of this origin. The aroma is both sweet and sharp, with a hint of the East African "wild" note in the coffee. It develops excellent roast flavors at Full City, alternating between slightly sweet-caramelly and bittersweet chocolate, with a slight twist of lemon rind in the cup.
